Drunk Chicken

 

 

Fill the Chicken Up cooking tube with beer, wine, fruit juice, broth, soft drinks, or other light liquids

Add 1 tablespoon of Papa Jeabert's Spice de Terre

Try adding some of the following to the liquid in the tube:

  • 1/2 tablespoon chopped onion
  • 1/2 tablespoon chopped bell pepper
  • 1 clove of garlic – chopped
  • 1 slice of orange or lemon (with the peeling)

Season the outside of a whole chicken (fryer or hen) with a generous amount of Papa Jeabert's Spice de Terre

Place the chicken over the top of the tube so that the tube sits inside the cavity of the chicken

Put a small piece of foil over the neck opening to seal in the juices

Roast in a preheated oven set at 350 degrees – 400 degrees for approximately 1 1/2 hours, or roast on a bar-b-que pit or gas grill, with the top closed, for approximately 2 hours
