Over the past year, new federal mandates have changed what can be served during school lunches.
Statewide, food being served will be lower in fat and higher in fruits and vegetables. All grains will need to be whole grains, and the sodium content of seasonings and condiments will need to be reduced. But could those mandates go beyond the cafeteria?
Leslie Wimberley, child nutritionist with Iberia Parish Schools says that all food served in vending machines or sold at a fundraiser on campus, will now have to be more modified. There is talk that those modifications could use the same guidelines that cafeterias have had to comply with. All changes are expected to take place, slowly, over the next two years.
